Ingredients

  • 5 medium apples, peeled, cored, and sliced Use a mix of Gala and Fuji apples for sweetness and texture.
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp vanilla extract
  • 1/4 cup chopped pecans Optional but recommended for crunch.
  • 1 tbsp all-purpose flour To thicken the filling.
  • 1 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 6 tbsp cold unsalted butter Cut into small pieces.
  • 1/2 cup whole milk Or buttermilk.
  • 1 tbsp granulated sugar For sprinkling on top.
  • 1 tbsp melted butter For brushing the biscuit topping.

Equipment

  • Medium mixing bowl
  • Baking dish 9x9 inches or similar
  • Small bowl
  • Wooden spoon or spatula
  • Measuring cups and spoons
  • Pastry cutter or fork
  • Oven mitts
  • Cooling rack

Method

  1. Preheat your oven to 375°F (190°C). Lightly grease your 9x9-inch baking dish.
  2. In a medium bowl, combine sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, vanilla extract, chopped pecans, and 1 tablespoon flour. Toss gently to coat the apples evenly.
  3. Transfer the apple mixture to the prepared baking dish and spread in an even layer.
  4. In a small bowl, whisk together flour, baking powder, and salt. Using a pastry cutter or fork, cut the cold butter into the flour mixture until it resembles coarse crumbs.
  5. Add milk to the flour and butter mixture and gently stir until just combined. The dough should be slightly sticky and soft.
  6. Drop spoonfuls of the biscuit dough evenly over the apple filling, covering as much surface as possible but leaving small gaps for the fruit to bubble through.
  7. Brush the biscuit topping with melted butter and sprinkle granulated sugar over the top.
  8. Bake the cobbler in the preheated oven for about 40-45 minutes, or until the biscuits are golden brown and the apples are bubbly and tender.
  9. Remove from the oven and let cool on a wire rack for 10-15 minutes before serving.

Notes

  • Use a mix of firm, sweet apples like Gala and Fuji to maintain texture and natural sweetness.
  • Adding pecans is optional but recommended for a subtle crunch and nutty flavor.
  • For extra aroma, consider stirring a splash of vanilla extract into the biscuit dough as well.
  • Serve warm with vanilla ice cream or whipped cream for a classic finish.
  • Leftovers keep well covered in the fridge for up to 3 days and can be gently reheated in the oven.
