Ingredients

  • 1.5 pounds boneless, skinless chicken thighs
  • 1 cup full-fat coconut milk Preferably canned, well-shaken.
  • 2 tablespoons fresh lime juice About 2 limes.
  • 1 teaspoon lime zest About 1 lime.
  • 3 cloves garlic Minced.
  • 1 tablespoon fresh ginger Grated.
  • 1 tablespoon brown sugar
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt Adjust to taste.
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon chili flakes Optional for heat.
  • 1/4 cup fresh cilantro leaves Chopped or substitute with fresh basil.

Equipment

  • Mixing bowl
  • Whisk
  • Large Skillet
  • Measuring cups
  • Zester
  • Cutting board
  • Tongs

Method

  1. In a mixing bowl, combine coconut milk, lime juice, lime zest, minced garlic, grated ginger, brown sugar, salt, black pepper, and chili flakes if using. Whisk until the sugar is dissolved and ingredients are well mixed.
  2. Place the chicken thighs in the bowl with the coconut lime marinade. Coat the chicken thoroughly and cover. Refrigerate for at least 30 minutes, ideally 1 hour, to maximize flavor and tenderness.
  3. Pour olive oil into a large skillet and heat over medium-high heat until shimmering but not smoking.
  4. Remove the chicken from the marinade, letting excess drip off (reserve the marinade). Place chicken thighs in the skillet without crowding. Cook for about 5-7 minutes per side until golden brown and cooked through (internal temperature should reach 165°F / 74°C). Transfer cooked chicken to a plate and keep warm.
  5. Reduce heat to medium, pour the reserved marinade into the skillet. Simmer gently for 3-4 minutes, stirring occasionally, until it thickens slightly.
  6. Return the cooked chicken to the pan, spoon the sauce over the pieces, and let simmer together for 2 minutes to meld flavors.
  7. Sprinkle chopped cilantro (or basil) over the chicken before serving. Serve with jasmine rice or your preferred side to soak up the delicious sauce.

Notes

  • For best results, don’t skip marinating; it deeply enhances the flavor and tenderness.
  • Fresh lime juice and zest are essential for bright, authentic flavor—avoid bottled lime juice if possible.
  • Adjust chili flakes according to your heat preference, or omit for a milder dish.
  • Leftovers keep well refrigerated for 2 days; reheat gently to maintain sauce creaminess.
  • Pair with steamed vegetables or a fresh green salad for a complete tropical meal.
