Corn Ribs

Corn Ribs are the viral 2021 restaurant trick that turned humble sweet corn into a snackable rib-shaped treat. Fresh cobs are par-softened, quartered lengthwise, tossed in olive oil and a smoky paprika-garlic rub, then blasted in a hot air fryer until the kernels curl outward and char at the edges. A final squeeze of lime sharpens the smoke and sweetness.

Ingredients
  

  • 4 ears fresh sweet corn on the cob husks and silks removed
  • 3 tbsp olive oil or any neutral oil
  • 2 tsp smoked paprika Spanish pimentón preferred
  • 1.5 tsp garlic powder
  • 1 tsp fine sea salt
  • 0.5 tsp freshly ground black pepper
  • 1 whole lime cut into wedges, for finishing

Equipment

  • 1 microwave-safe plate for par-softening the cobs
  • 1 large heavy chef's knife at least 8 inches, sharp
  • 1 sturdy cutting board
  • 1 damp kitchen towel placed under the cutting board for stability
  • 1 Large mixing bowl
  • 1 air fryer at least 5 quart capacity
  • 1 Tongs

Method
 

  1. Shuck the corn and remove all silks. Place the 4 cobs on a microwave-safe plate and microwave on high for 2 minutes, until the cobs are warm and slightly softened but not fully cooked. If you do not have a microwave, drop the cobs into a pot of boiling water for 5 minutes, then drain and let cool for 3 minutes.
  2. Spread a damp kitchen towel flat on the counter and set your cutting board on top so it cannot slide. Trim about half an inch off each end of every cob so they stand flat.
  3. Lay one cob on its side and cut it in half crosswise with a large sharp knife, rocking the blade down through the center. Stand one half on its flat end and, keeping your fingers well clear, slice straight down through the middle to split it in half lengthwise. Turn each half kernel-side up and slice down the middle once more to make 4 long riblets. Repeat with the remaining halves and cobs to make 32 riblets total.
  4. Preheat the air fryer to 380 F for 3 minutes.
  5. In a large mixing bowl, whisk together 3 tablespoons olive oil, 2 teaspoons smoked paprika, 1.5 teaspoons garlic powder, 1 teaspoon salt, and 0.5 teaspoon black pepper into a loose paste.
  6. Add the corn riblets to the bowl and toss with your hands or tongs until every piece is fully coated in the spiced oil, working the rub into the kernels.
  7. Arrange the riblets kernel-side up in the air fryer basket in a single layer, working in 2 batches if needed so they are not crowded.
  8. Air fry at 380 F for 8 to 10 minutes, until the kernels visibly curl outward into the signature rib shape and char at the edges. Do not undercook: the curl only appears when the kernels dry and contract at high heat.
  9. Transfer the hot corn ribs to a serving platter, squeeze fresh lime juice generously over the top, and serve immediately with extra lime wedges alongside.

Notes

  • Slicing is the trickiest step. Always soften the cob first, use a heavy sharp knife, and place a damp towel under the cutting board so it does not slide.
  • No air fryer? Roast on a rimmed sheet pan at 425 F for 12 to 15 minutes, or grill over direct high heat, turning once, until the kernels curl.
  • Serve with chipotle or garlic aioli, avocado crema, crumbled cotija, chopped cilantro, extra lime wedges, or a shake of hot sauce on the side.
  • Store leftovers in an airtight container in the fridge for up to 2 days and re-crisp in the air fryer at 380 F for 3 minutes.
