Ingredients
  

  • 2 medium delicata squash About 2 pounds total.
  • 3 tablespoons olive oil
  • 1 teaspoon fresh thyme leaves or rosemary Finely chopped.
  • To taste salt About ½ teaspoon.
  • To taste freshly ground black pepper About ¼ teaspoon.
  • Optional: pinch chili flakes For heat.
  • Optional: 1 teaspoon fresh lemon juice For finishing.

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Rinse the delicata squash under cool water and dry. Cut off the ends, then slice the squash in half lengthwise. Scoop out the seeds and strings with a spoon.
  3. Slice the cleaned squash halves into thin half-moons, about ¼ inch thick, and place them in a mixing bowl.
  4. Add olive oil, fresh thyme or rosemary, salt, pepper, and chili flakes (if using) to the bowl. Toss everything gently but thoroughly until each slice is coated evenly.
  5. Spread the squash slices in a single layer on the prepared baking sheet, ensuring they aren’t crowded.
  6. Roast in the preheated oven for about 22-25 minutes, flipping the slices halfway through cooking until tender and caramelized.
  7. Remove from the oven, transfer to a serving dish, and drizzle with fresh lemon juice before serving warm.

  • The delicata squash seeds can be rinsed, patted dry, tossed with a little olive oil, salt, and roasted separately on a small baking sheet at 300°F for 15-20 minutes until crunchy. They make a tasty, nutritious snack!
