Ingredients

  • 1 pound fresh salmon fillet, skin removed and chopped
  • 1/4 cup finely diced onion
  • 1/2 cup plain breadcrumbs Swap for panko for a lighter texture if desired.
  • 1 large egg
  • 2 tablespoons fresh dill, finely chopped
  • 1/2 teaspoon salt Adjust seasoning to taste.
  • 1/4 teaspoon black pepper Adjust seasoning to taste.
  • 3 tablespoons vegetable oil (for frying)
  • To taste lemon wedges, tartar sauce or aioli for serving

Equipment

  • Mixing bowl
  • Frying pan
  • Spatula
  • Plate lined with paper towels

Method

  1. Chop the fresh salmon into small pieces or pulse briefly in a food processor until coarsely ground, avoiding over-processing to maintain texture.
  2. In a mixing bowl, combine the chopped salmon, finely diced onion, breadcrumbs, beaten egg, chopped dill, salt, and pepper. Mix gently but thoroughly until the ingredients bind together.
  3. Divide the mixture into 4 equal portions. Shape each portion into a compact patty about 3 inches wide and 3/4 inch thick. Place them on a plate and refrigerate for 10 minutes to help firm up.
  4. Heat the vegetable oil in a skillet over medium heat until shimmering but not smoking.
  5. Carefully place the patties in the hot pan without overcrowding. Cook for about 4-5 minutes on each side until golden brown and crisp.
  6. Transfer cooked patties to a plate lined with paper towels to drain excess oil. Serve warm with lemon wedges and your choice of tartar sauce or aioli.

Notes

  • For a brighter flavor, add 1 teaspoon of lemon zest to the mixture.
  • Swap plain breadcrumbs for panko for a lighter texture.
  • To add crunch, fold in 2 tablespoons chopped green onions.
  • Adjust seasoning to taste; a pinch of cayenne or smoked paprika can add a mild spicy kick.
  • Leftover patties keep well refrigerated for up to 2 days and reheat nicely in a skillet or oven.
  • Pair with a fresh salad or steamed vegetables for a balanced meal.
