Ingredients

  • 1 pound ground beef
  • 1 small onion, diced (about 1/2 cup)
  • 1 can creamy mushroom soup (10.5 oz)
  • 1 cup shredded cheddar cheese
  • 1 bag frozen tater tots (32 oz)
  • To taste salt
  • To taste pepper
  • 1/2 cup sour cream (optional, for extra creaminess)

Equipment

  • Large Skillet
  • 9x13 inch baking dish
  • Measuring cups and spoons
  • Oven mitts

Method

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add the ground beef and diced onion. Season with salt and pepper. Cook until the beef is fully browned and the onions are softened, about 7-10 minutes. Drain any excess fat.
  3. Stir in the creamy mushroom soup until the mixture is well combined. If using, add the sour cream now and mix thoroughly for extra creaminess.
  4. Transfer the beef mixture into a 9x13 inch baking dish, spreading it out evenly.
  5. Sprinkle shredded cheddar cheese evenly over the beef mixture.
  6. Arrange the frozen tater tots in a single layer over the cheese.
  7. Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the tater tots are golden brown and crispy, and the casserole is bubbly.
  8. Remove from the oven and let it cool for about 5 minutes before serving.

Notes

  • For more flavor, you can sauté a chopped bell pepper with the onions.
  • If preferred, swap the creamy mushroom soup for a homemade mushroom sauce to control salt.
  • This casserole can be prepared a day ahead; assemble in the baking dish, cover with foil, and refrigerate. When ready, bake as instructed, adding a few extra minutes if baking from chilled.
  • Leftovers reheat well in the oven or microwave.
